This was a collaboration with Giulio the from Mapu test kitchen in NZ. Evetts first southern hemisphere chef to be hosted. Giulio hailing originally from South America resides in NZ where he aims to showcase NZ local ingredients to the best.
This collaboration focused around a mix of fermented and preserved NZ ingredients along with korean ingredients in a bold 1 night pop up.
The menu paired along with South American wines and Korean alcohol also lived long in the memory for the five tables that joined us.
